Every Emberdough pizza starts two days before it meets the flame. Our dough ferments slowly for 48 hours, developing the airy, leopard-spotted crust that regulars cross town for.
We mill organic flour in-house, use San Marzano tomatoes crushed the same morning, and pull our fior di latte fresh daily. The oak-fired oven does the rest in ninety seconds flat.
Care is not a slogan here. It is the stretch, the sauce, the timing, and the person who remembers exactly how you like your crust.
